Hot Cheesy Artichoke Dip

Artichokes pack in fiber for this filling snack. Rice crackers are thin crisps that are a lot lighter in calories and carbohydrates when compared to a slice of sandwich bread.

Ingredients |

  • 4 frozen artichokes, thawed and chopped (or use canned)
  • 1/2 cup plain, low-fat Greek Yogurt
  • 1/4 cup grated reduced fat pepper jack cheese
  • 10 rice crackers (I would substitute WASA crackers)

Directions |

  1. Mix the artichokes, yogurt, mozzarella, and garlic power in a small oven safe bowl.
  2. Stir well and refrigerate until ready to enjoy.
  3. Before Serving, heat for 10 minutes at 400°F oven or microwave on high for 30 seconds.
  4. Serve immediately with crackers.
